Hmong Cucumbers are grown by Hmong people. The fruit grows big and long with a high water content. When the cucumber is young, it has a little sweetness and light green skin color to it. As it ages, the skin turns yellow and the flesh becomes orange and sour. Hmong people harvest some young ones to eat and let some age so they can harvest and scrape the flesh with a spoon, add some sugar and water and eat it just like that or pack into freezer bags and store in the freezer to eat throughout winter.
