African eggplant are a popular traditional vegetable grown predominantly in Central and West Africa. They are small and round, roughly 2 inch, with green skin. The meaty flesh is white to ivory and contains tiny edible seeds. The fruit has a very bitter taste but are consumed fresh, boiled, steamed, pickled, or in a stew with other vegetables and meat. The young leaves are often used in soup with other meats.
